Country-Style Omelet with Potatoes and Carrots

Ingredients
- 300 g Potato
- 150 g Carrot
- 4 piece Eggs
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the potatoes and carrots into small cubes.
Step 2
Sauté the diced vegetables in a pan with oil until tender, about 10 minutes.
Step 3
Whisk the eggs in a bowl with salt and pepper.
Step 4
Pour the beaten eggs over the vegetables and cook for 3-4 minutes, gently lifting the edges.
Step 5
Fold the omelet in half and serve immediately.
