Plain Omelet with Raw Carrot Salad
A simple omelet served with a crisp salad of shredded carrots dressed in olive oil, fresh lemon juice, and herbs.

Ingredients
- 4 pieces Eggs
- 200 g Carrots
- 1 tbsp Butter
- 0.5 piece Fresh lemon
- 1 small bunch Fresh parsley
- 1 pinch Salt
- 1 pinch Pepper
- 2 tbsp Olive oil
Instructions
Step 1
Shred the raw carrots and place in a bowl. Drizzle with lemon juice, olive oil, add chopped parsley, salt and pepper. Set aside.
Step 2
Beat the eggs in a bowl with salt and pepper.
Step 3
Melt the butter in a skillet over medium-high heat, pour in the eggs and cook for 4-5 minutes until set.
Step 4
Fold the omelet in half and serve immediately with the carrot salad.
