Mexican Omelette with Black Beans and Tofu
A hearty omelette filled with spiced black beans, crumbled tofu, bell peppers and fresh cilantro. A protein-rich Mexican brunch without unnecessary carbs.

Ingredients
- 4 piece Eggs
- 100 g Firm tofu
- 120 g Canned black beans
- 1 piece Yellow bell pepper
- 1 piece Tomato
- 5 g Fresh cilantro
- 1 tbsp Olive oil
Instructions
Step 1
Crumble the tofu, dice the bell pepper and cut the tomato into small pieces.
Step 2
Sauté the tofu and bell pepper in olive oil for 4 minutes. Add the drained black beans and tomato.
Step 3
Beat the eggs, season with salt and pepper. Pour over the filling and cook over low heat for 5 minutes.
Step 4
Fold the omelette, sprinkle with fresh chopped cilantro and serve immediately.
