Mexican-Style Omelette with Beans and Cheese

Ingredients
- 4 medium Eggs
- 200 g Canned red beans
- 80 g Gruyère
- 0.5 medium Onion
- 1 small Tomato
- 30 g Butter
- 0.5 tsp Cumin
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Drain the red beans and warm them in a saucepan with cumin for 3 minutes.
Step 2
Finely mince the onion and dice the tomato.
Step 3
Crack the eggs into a bowl and beat them with salt and pepper.
Step 4
Melt the butter in a non-stick pan over medium-high heat and pour in the beaten eggs.
Step 5
When the eggs begin to set, add the warm beans, onion, tomato, and grated Gruyère to one side.
Step 6
Fold the omelette in half and let cook for 1-2 minutes for the cheese to melt, then serve.
