Mediterranean Omelet with Chicken, Spinach, and Sun-Dried Tomatoes

Ingredients
- 6 piece Eggs
- 150 g Cooked chicken breast
- 100 g Spinach leaves
- 40 g Sun-dried tomatoes
- 1 tbsp Olive oil
- 1 pinch Salt and pepper
Instructions
Step 1
Beat the eggs in a bowl with a pinch of salt and pepper.
Step 2
Heat the olive oil in a large non-stick skillet over medium heat. Sauté the spinach for 1 minute until wilted.
Step 3
Add the shredded chicken and sun-dried tomatoes cut into strips, stir for 1 minute.
Step 4
Pour the beaten eggs over the filling and cook for 4-5 minutes over low heat, tilting the pan to distribute the egg. Fold and serve.
