Japanese Omelette with Shiitake Mushrooms and Edamame
A Japanese-style rolled omelette filled with sautéed shiitake mushrooms and edamame. Umami, protein, and lightness all in one delicious dish.

Ingredients
- 5 pieces Eggs
- 100 g Shiitake mushrooms
- 80 g Shelled edamame
- 1 tbsp Soy sauce
- 1 tsp Sesame oil
- 2 pieces Green onions
Instructions
Step 1
Slice the shiitake and green onions. Boil the edamame for 2 minutes.
Step 2
Sauté the shiitake in sesame oil for 3 minutes, add the edamame and soy sauce.
Step 3
Beat the eggs. Pour a thin layer into an oiled pan and roll the omelette as you add more egg.
Step 4
Slice the rolled omelette diagonally and serve topped with the mushroom and edamame mixture, garnished with green onions.
