Japanese Omelet with Tofu and Shiitake Mushrooms
A Japanese-style rolled omelet filled with sautéed firm tofu, shiitake mushrooms and scallions. A quick and light umami-rich dish.

Ingredients
- 4 piece eggs
- 120 g firm tofu
- 100 g shiitake mushrooms
- 3 stem scallions
- 2 tbsp soy sauce
- 1 tbsp sesame oil
Instructions
Step 1
Dice the tofu into small cubes and thinly slice the shiitakes. Finely chop the scallions.
Step 2
Sauté the tofu and shiitakes in sesame oil with soy sauce for 4 minutes.
Step 3
Beat the eggs and pour half into an oiled skillet. Roll the omelet in the Japanese style, gradually adding the remaining egg.
Step 4
Fill the rolled omelet with the tofu-shiitake mixture and sprinkle with scallions. Serve with remaining soy sauce.
