Filled Omelet with Potatoes and Herbs
A generous omelet filled with sautéed potatoes, served alongside a green salad and tomatoes. A complete and satisfying meal.

Ingredients
- 300 g Potatoes
- 4 piece Eggs
- 15 g Butter
- 200 g Tomato
- 100 g Green salad
- 1 small bunch Fresh herbs (chives or parsley)
- 1 pinch Salt
- 1 pinch Pepper
- 5 ml Oil
Instructions
Step 1
Peel and cut potatoes into small cubes. Cook in a skillet with a little oil and butter for 10-12 minutes until golden.
Step 2
Meanwhile, beat the eggs with the fresh herbs, salt, and pepper.
Step 3
Once the potatoes are cooked, remove and set aside. Melt the remaining butter in the skillet.
Step 4
Pour the beaten eggs and cook for 3-4 minutes. Add the potatoes to the center before folding the omelet.
Step 5
Serve the omelet with a tomato and green salad.
