Potato and Fresh Herb Omelette
A fluffy omelette filled with sautéed potatoes and fresh herbs. Budget-friendly and ready in 20 minutes.

Ingredients
- 250 g Potatoes
- 4 piece Eggs
- 30 g Butter
- 1 handful Fresh parsley
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the potatoes into small cubes.
Step 2
Cook the potatoes in a pan with 15g of butter for 8-10 minutes until golden.
Step 3
Beat the eggs with salt, pepper, and chopped fresh parsley.
Step 4
Add 15g of butter to the pan, pour in the eggs and let set for 2-3 minutes. Add the cooked potatoes to the center.
Step 5
Fold the omelette in half and serve immediately.
