Baked Eggs in Avocado Halves with Parmesan
Eggs baked in avocado halves, topped with parmesan and broiled until golden, served with roasted cherry tomatoes on the side. A creative, protein-rich brunch.

Ingredients
- 2 piece ripe avocados
- 4 piece eggs
- 40 g shredded parmesan
- 150 g cherry tomatoes
- 1 tbsp olive oil
- 1 pinch Espelette pepper
Instructions
Step 1
Cut the avocados in half and remove the pit. Enlarge the cavity slightly to accommodate the egg.
Step 2
Place the avocado halves on a baking sheet. Crack an egg into each half. Arrange the cherry tomatoes around them.
Step 3
Sprinkle with parmesan and Espelette pepper. Broil in the oven at 200°C for 12-15 minutes.
Step 4
Serve straight from the oven with the roasted tomatoes on the side.
