Baked Eggs with Spiced Ground Beef and Mexican-Style Peppers
Eggs baked in a ramekin over a bed of seasoned ground beef, peppers, and tomatoes. A hearty Mexican-inspired oven dish that's perfect for a protein-packed brunch.

Ingredients
- 4 pieces eggs
- 200 g ground beef
- 1 piece green bell pepper
- 200 g crushed tomatoes
- 1 tsp ground cumin
- 1 tsp Espelette pepper
- 1 tbsp olive oil
Instructions
Step 1
Preheat oven to 200°C. Dice the bell pepper into small pieces.
Step 2
Brown the ground beef in a skillet with olive oil for 4 minutes. Add the pepper and cook for 3 minutes.
Step 3
Add the crushed tomatoes, cumin, and Espelette pepper. Simmer for 3 minutes. Divide between 2 ramekins.
Step 4
Crack 2 eggs into each ramekin. Bake for 8 minutes until the egg whites are set.
