Deconstructed Chocolate Tomato Mousse
A surprising and indulgent dessert: a light chocolate mousse served with candied sweet tomatoes, a sweet-savory contrast of modern cuisine.

Ingredients
- 100 g Dark chocolate
- 2 piece Eggs
- 30 g Sugar
- 200 g Tomato
- 2 tbsp Honey
- 50 g Butter
- 1 pinch Salt
Instructions
Step 1
Dice the tomatoes and cook in the oven at 180°C with honey for 20 minutes to lightly candy them.
Step 2
Melt the chocolate with the butter in a double boiler or in the oven at low temperature.
Step 3
Separate the egg whites from the yolks. Add the sugar to the yolks and mix.
Step 4
Pour the melted chocolate into the yolk-sugar mixture and stir well.
Step 5
Whip the egg whites with a pinch of salt until stiff peaks form, then gently fold into the chocolate mixture.
Step 6
Divide the mousse into glasses and garnish with candied tomatoes.
