Moin Moin with Black Beans
Savory Nigerian black bean cake made with black bean puree, eggs, and spices, steamed in banana leaves. A hearty and traditional snack.

Ingredients
- 250 g Dried black beans
- 3 piece Eggs
- 1 piece White onion
- 150 g Tomatoes
- 1 piece Red chili
- 2 clove Garlic
- 5 g Salt
- 2 g Black pepper
- 30 ml Peanut oil
- 6 piece Banana leaves
- 200 ml Water
Instructions
Step 1
Soak the black beans for 2 hours, then blanch for 20 minutes until tender.
Step 2
Drain the beans and blend into a smooth puree with onion, tomato, chili, and garlic.
Step 3
Beat the eggs and gently fold into the puree. Add salt, pepper, and oil.
Step 4
Prepare the banana leaves by lightly heating them to soften.
Step 5
Fill each leaf with a portion of batter, fold, and roll tightly.
Step 6
Place the packets in a steamer or on a rack over boiling water. Cover and steam for 30 minutes.
Step 7
Let cool for 5 minutes before serving hot or warm.
