Soft-Centered Chocolate and Quinoa Cake

Ingredients
- 200 g Dark chocolate
- 150 g Cooked quinoa
- 3 unit Eggs
- 80 g Sugar
- 50 g Butter
- 40 g Flour
- 1 tsp Vanilla
- 1 pinch Salt
Instructions
Step 1
Preheat the oven to 180°C. Melt the chocolate and butter together in a double boiler.
Step 2
Separate the egg whites from the yolks. Whisk the yolks with sugar until pale.
Step 3
Mix the melted chocolate and butter into the egg yolks. Add the flour, vanilla and cooked quinoa.
Step 4
Whip the egg whites with a pinch of salt until stiff peaks form. Gently fold into the chocolate mixture.
Step 5
Pour into a buttered mold. Bake for 18-20 minutes: the center should remain soft and gooey.
