Chocolate Orange Lava Cake with Caramelized Broccoli
An inventive dessert combining a rich chocolate-orange fondant with a topping of lightly caramelized, candied broccoli for a truly unique taste experience.
Ingredients
- 150 g Dark chocolate
- 2 piece Orange
- 200 g Broccoli
- 80 g Butter
- 80 g Sugar
- 3 piece Eggs
- 30 g Flour
- 2 ml Vanilla
- 2 g Salt
- 30 g Honey
- 20 g Ground almond
Instructions
Step 1
Preheat the oven to 190°C and prepare 4 individual buttered ramekins.
Step 2
Melt the chocolate and butter together in a double boiler.
Step 3
Zest the oranges and extract the juice, then mix with the melted chocolate.
Step 4
Whisk the eggs with the sugar until pale and thick.
Step 5
Gently fold the flour and ground almond into the chocolate-orange mixture.
Step 6
Fold the egg-sugar mixture into the chocolate preparation.
Step 7
Fill the ramekins and bake for 10 minutes (runny center).
Step 8
Meanwhile, peel the broccoli into thin strips and caramelize with honey in a pan for 5 minutes.
Step 9
Unmold the lava cakes and garnish with caramelized broccoli, serve immediately.
