Minestrone with White Beans and Kale
A generous Italian minestrone featuring white beans, kale, and tomatoes, infused with rosemary and garlic. A hearty, protein-rich soup without pasta.

Ingredients
- 400 g canned white beans
- 150 g kale
- 200 g crushed tomatoes
- 1 piece carrot
- 2 clove garlic
- 2 sprig fresh rosemary
Instructions
Step 1
Mince the garlic and cut the carrot into small dice. Remove the stems from the kale and tear the leaves. Drain the beans.
Step 2
Sauté the garlic and carrot in a pot with a drizzle of oil for 3 minutes. Add the rosemary.
Step 3
Add the crushed tomatoes, beans, and 500 ml of water. Bring to a boil, then simmer for 15 minutes.
Step 4
Add the kale and cook for 5 minutes. Remove the rosemary, season to taste, and serve.
