Complete Turkish Meze Platter
Turkish assortment of cold and warm appetizers: hummus, baba ganoush, tabbouleh, and roasted chickpeas.

Ingredients
- 400 g Canned chickpeas
- 1 piece Eggplant
- 2 piece Tomato
- 40 g Fresh parsley
- 1 piece Red onions
- 3 piece Fresh lemon
- 150 ml Tahini
- 100 ml Olive oil
- 1 tbsp Espelette pepper
- 4 piece Pita bread
Instructions
Step 1
Roast the whole eggplant in the oven for 20 minutes, set aside.
Step 2
Drain the chickpeas and toast in a pan for 5 minutes with spices.
Step 3
Prepare hummus with canned chickpeas, tahini, and lemon.
Step 4
Prepare baba ganoush with roasted mashed eggplant, tahini, and garlic.
Step 5
Chop tomatoes and onions, mix with parsley and lemon for tabbouleh.
Step 6
Arrange all mezze on a platter with pita bread.
