Potato and Dark Chocolate Medallion with Orange Coulis
A bold creation blending a pan-fried potato cake with crumbled dark chocolate, served with a coulis of fresh orange zest for an unusual sweet-savory experience.
Ingredients
- 400 g Potato
- 80 g Dark chocolate 70%
- 3 piece Oranges
- 50 g Butter
- 100 ml Coconut milk
- 30 g Brown sugar
- 15 g Potato starch
- 1 pinch Espelette pepper
- 4 g Salt
- 1 pinch White pepper
- 1 piece Egg
Instructions
Step 1
Cook the potatoes in salted water for 18 minutes, drain and partially mash with butter and egg
Step 2
Add the starch, season with salt and pepper, form two thick medallions, and refrigerate for 10 minutes
Step 3
Squeeze the oranges and reduce the juice in a pot with brown sugar for 8 minutes until it reaches a light syrup consistency
Step 4
Add the coconut milk to the coulis, stir in the orange zest and pepper, and let cool
Step 5
Pan-fry the medallions for 5 minutes on each side until golden, sprinkle with crumbled dark chocolate at the end of cooking
Step 6
Plate the medallions and surround with the orange-chocolate coulis, serve immediately
