Roasted Mackerel with Potatoes and Lemon
A flavorful and healthy fish roasted in the oven with crispy potatoes. A simple yet elegant Mediterranean dish.

Ingredients
- 2 fillets Mackerel
- 400 g Potatoes
- 3 tbsp Olive oil
- 1 piece Lemon
- 1 sprig Fresh thyme
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Preheat the oven to 200°C.
Step 2
Cut the potatoes into cubes and arrange them in a baking dish.
Step 3
Drizzle the potatoes with 2 tbsp of olive oil, season with salt and pepper.
Step 4
Bake the potatoes for 15 minutes.
Step 5
Place the mackerel fillets on top of the potatoes, drizzle with oil and lemon juice.
Step 6
Add the thyme, season the fillets with salt and pepper, then bake for another 10 minutes.
