Roasted Mackerel with Olives and Mediterranean Pasta
A delicious Portuguese-Mediterranean dish featuring oven-roasted mackerel served with spaghetti tossed with olives and fresh herbs. Healthy, delicious, and ready in 30 minutes.

Ingredients
- 400 g Fresh mackerel
- 250 g Spaghetti
- 100 g Olives
- 1 piece Lemon
- 1 tsp Herbes de Provence
- 150 g Cherry tomatoes
- 3 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Black pepper
Instructions
Step 1
Preheat the oven to 200°C.
Step 2
Cook the spaghetti in a pot of boiling salted water according to package directions.
Step 3
Clean the mackerel, place it on an oiled baking sheet, drizzle with lemon juice and sprinkle with Herbes de Provence, salt and pepper.
Step 4
Bake the mackerel for 12-15 minutes until the flesh is opaque.
Step 5
Drain the pasta and toss it with the olives, halved cherry tomatoes and a drizzle of olive oil.
Step 6
Serve the pasta topped with the roasted mackerel.
