Mackerel with Eggplant and Za'atar
Mackerel fillets spiced with za'atar and roasted in the oven with tender eggplant and tomatoes, a recipe with Lebanese flavors.

Ingredients
- 2 pieces mackerel fillet
- 1 large eggplant
- 2 pieces tomatoes
- 2 tbsp za'atar
- 2 tbsp olive oil
- 1 pinch salt and pepper
Instructions
Step 1
Preheat oven to 200°C. Cut the eggplant into 2 cm cubes and tomatoes into quarters.
Step 2
Mix vegetables with 1 tbsp olive oil and half the za'atar on a baking sheet. Bake for 10 minutes.
Step 3
Brush mackerel fillets with remaining oil and za'atar. Place them on the vegetables and return to oven for 10 minutes.
Step 4
Serve hot directly from the baking sheet.
