Roasted Duck Breast with Turnips and Green Beans
A crispy roasted duck breast with caramelized turnips and green beans. A French countryside classic reimagined in a lighter version.

Ingredients
- 1 piece duck breast
- 3 pieces turnips
- 200 g green beans
- 1 tsp honey
- 3 sprigs fresh thyme
- 1 pinch salt and pepper
Instructions
Step 1
Preheat oven to 200°C. Score the duck skin in a crosshatch pattern. Season with salt and pepper.
Step 2
Peel the turnips and cut into quarters. Trim the green beans.
Step 3
Place the duck skin-side up on a baking sheet. Arrange the turnips and green beans around it, drizzle with honey and add the thyme.
Step 4
Roast for 25 minutes. The duck should be pink inside and the skin crispy. Let rest for 3 minutes before slicing.
