Mafé with Beef and Sweet Potato
A rich and authentic Senegalese stew made with creamy peanut butter, tender beef, and West African vegetables, served over rice.

Ingredients
- 700 g Beef stew meat
- 150 g Natural peanut butter
- 400 g Sweet potato
- 3 medium Carrot
- 2 medium Turnip
- 2 medium Onion
- 3 clove Garlic
- 2 tbsp Tomato powder
- 600 ml Beef broth
- 3 tbsp Sunflower oil
- 1 tsp Salt and pepper
- 250 g White rice
Instructions
Step 1
Heat the oil and brown the beef pieces on all sides.
Step 2
Remove the meat and sauté the onion and garlic. Add the tomato powder.
Step 3
Return the beef, add the broth, and simmer covered for 20 minutes.
Step 4
Add the sweet potato cut into cubes, carrot, and turnip. Continue cooking for 12 minutes.
Step 5
Dilute the peanut butter in a little warm broth and stir it into the stew. Simmer for 5 minutes.
Step 6
Serve hot with white rice.
