Herb-Crusted Sea Bass with Roasted Vegetables
Sea bass fillets topped with a fresh herb crust and roasted in the oven with green beans and tomatoes, an elegant and light dish.

Ingredients
- 2 piece sea bass fillet
- 200 g green beans
- 2 piece tomatoes
- 1 bunch fresh parsley and basil
- 2 tbsp olive oil
- 2 clove garlic
- 1 pinch salt and pepper
Instructions
Step 1
Preheat oven to 210°C. Trim the green beans, cut the tomatoes into quarters, and finely chop the garlic and herbs.
Step 2
Mix the chopped herbs with 1 tbsp olive oil and press onto the sea bass fillets. Arrange the green beans and tomatoes on a baking sheet, drizzle with remaining oil, season with salt and pepper.
Step 3
Place the fillets on top of the vegetables and bake for 15 minutes. The fish should be golden and flake easily.
