Lobio (Georgian Red Bean Stew)
A comforting Georgian stew made with red beans, turmeric and Caucasian spices, served with Georgian bread.

Ingredients
- 800 g Canned red beans
- 2 medium Red onion
- 400 g Canned tomato
- 4 clove Garlic
- 15 g Fresh ginger
- 20 g Fresh cilantro
- 1 tsp Turmeric
- 0.5 tsp Cayenne pepper
- 1 tsp Cumin
- 1 tsp Salt and pepper
- 3 tbsp Olive oil
- 300 g Rice bread
Instructions
Step 1
Heat the olive oil and sauté the finely chopped onion for 4 minutes.
Step 2
Add minced garlic and ginger, cook for 2 minutes.
Step 3
Add spices (turmeric, cayenne, cumin) and stir for 1 minute.
Step 4
Pour in crushed tomatoes and simmer for 5 minutes.
Step 5
Add drained red beans and simmer for 12 minutes.
Step 6
Stir in fresh cilantro, adjust seasoning and serve with rice bread.
