Baked Red Lentils with Spinach and Feta
A light gratin of creamy red lentils and fresh spinach topped with crumbled feta and baked until golden. A comforting and protein-rich Greek-inspired dish.

Ingredients
- 150 g Red lentil
- 200 g Fresh spinach
- 200 g Crushed tomato
- 80 g Feta
- 2 clove Garlic
- 1 tsp Dried oregano
Instructions
Step 1
Preheat the oven to 200°C. Cook red lentils for 8 minutes in boiling salted water, then drain.
Step 2
Mix the lentils with spinach, crushed tomatoes, minced garlic, and oregano in a baking dish.
Step 3
Crumble the feta over the top and bake for 20 minutes until golden and bubbling.
Step 4
Let rest for 2 minutes before serving.
