Caribbean-Style Lobster
Oven-roasted lobster with Creole spices, coconut and rum sauce. An exotic and impressive Caribbean dish.

Ingredients
- 4 piece whole lobsters
- 80 g clarified butter
- 200 ml coconut milk
- 60 ml white rum
- 4 piece scallions
- 1 piece scotch bonnet pepper
- 10 g fresh thyme
- 2 g nutmeg
- 2 piece lime
- 6 g salt and pepper
Instructions
Step 1
Preheat oven to 200°C (400°F)
Step 2
Split the lobsters in half lengthwise
Step 3
Brush with clarified butter and season
Step 4
Roast in the oven for 20 minutes until fully cooked
Step 5
Prepare the sauce: sauté the scallions and pepper in butter
Step 6
Add the rum and ignite briefly
Step 7
Add the coconut milk, thyme and nutmeg, simmer for 5 minutes
Step 8
Plate the lobsters and spoon sauce over top, squeeze fresh lime juice
