Khachapuri Khinkali (Georgian Meat Dumplings)
Tender Georgian dumplings filled with spiced ground beef and aromatic herbs, served in a savory broth.

Ingredients
- 250 g Wheat flour
- 150 ml Water
- 400 g Ground beef
- 2 medium Onion
- 2 clove Garlic
- 20 g Fresh cilantro
- 10 g Fresh mint
- 0.5 tsp Black pepper
- 1 tsp Salt
- 800 ml Beef stock
- 100 ml Sour cream
Instructions
Step 1
Prepare the dough: mix flour, water and salt. Knead for 5 minutes, cover and let rest for 10 minutes.
Step 2
Finely mince onion and garlic. Mix with ground beef, cilantro, mint and black pepper.
Step 3
Divide the dough into 16 portions. Roll each into a circle and fill with a tablespoon of filling.
Step 4
Close into a pouch shape and seal the edges well.
Step 5
Bring the stock to a boil and gently add the khinkali. Cook for 8-10 minutes until they float to the surface.
Step 6
Serve in bowls with the broth and a dollop of sour cream.
