Khachapuri Adjarian (Georgian Cheese Bread)
A puffy boat-shaped bread filled with melted Sulguni cheese and topped with a runny egg, an irresistible Georgian specialty.
Ingredients
- 400 g Wheat flour
- 240 ml Warm water
- 7 g Dry baker's yeast
- 300 g Sulguni or Mozzarella cheese
- 30 g Butter
- 4 piece Eggs
- 1 tsp Salt
- 1 tsp Sugar
Instructions
Step 1
Dissolve the yeast in warm water with a pinch of sugar, let rest for 5 minutes.
Step 2
Mix the flour and salt, make a well and pour in the yeast mixture.
Step 3
Knead for 8-10 minutes until the dough is smooth and elastic.
Step 4
Let the dough rise for 30 minutes in a warm covered place.
Step 5
Divide into 4 portions and shape into balls.
Step 6
Flatten each ball into an elongated boat shape.
Step 7
Fill generously with grated cheese and butter pieces.
Step 8
Bake in the oven at 220°C for 12 minutes.
Step 9
Remove from the oven, make a small indent in the center with your finger, and crack an egg into it.
Step 10
Return to the oven for 3-4 minutes until the egg white is lightly cooked.
