Adjarian Khachapuri
Georgian boat-shaped bread filled with melted cheese and topped with an egg. A decadent and delicious Georgian comfort food.
Ingredients
- 400 g All-purpose flour
- 200 ml Warm water
- 7 g Baker's yeast
- 300 g Georgian cheese (Imeruli)
- 150 g Fresh cottage cheese (Sulgunyni)
- 4 piece Eggs
- 50 g Butter
- 8 g Salt
- 5 g Sugar
- 20 ml Olive oil
Instructions
Step 1
Prepare the dough: mix flour, warm water, yeast, salt, and sugar. Knead for 8 minutes until you have a smooth dough.
Step 2
Let the dough rest for 20 minutes at room temperature.
Step 3
Grate the Imeruli cheese and mix with the fresh cottage cheese for the filling.
Step 4
Divide the dough into 4 portions. Stretch each portion into an oval on an oiled baking sheet.
Step 5
Fill each dough with a quarter of the cheese mixture, leaving the edges clear.
Step 6
Fold the edges toward the center to form an open-topped boat.
Step 7
Brush with melted butter and bake in the oven at 220°C for 15-18 minutes until golden.
Step 8
Remove from the oven and crack an egg into the center of each khachapuri. Bake for another 2 minutes.
Step 9
Serve immediately while very hot, with fresh butter.
