Khachapuri Adjarian
Georgian boat-shaped bread filled with melted cheese and topped with a runny egg yolk. A signature dish of Caucasian cuisine.

Ingredients
- 250 g Wheat flour
- 150 ml Warm water
- 7 g Baker's yeast
- 1 tsp Salt
- 1 tsp Sugar
- 200 g Suluguni cheese
- 100 g Mozzarella
- 30 g Butter
- 2 piece Eggs
- 2 tbsp Olive oil
Instructions
Step 1
Prepare the dough: mix flour, salt, and sugar. Add water and yeast. Knead for 8 minutes.
Step 2
Let the dough rest for 15 minutes covered.
Step 3
Shred the cheeses and mix with softened butter.
Step 4
Divide the dough in half. Roll out into ovals. Fill with the cheese mixture, leaving space at the edges.
Step 5
Fold the edges to form a boat shape. Bake in the oven at 200°C for 15 minutes.
Step 6
Crack one egg into the center of each khachapuri. Bake for 3 more minutes.
Step 7
Serve hot with fresh butter.
