Nigerian Jollof Rice
Vibrant and fragrant red rice from Nigerian cuisine, cooked in a rich and spicy tomato sauce with caramelized peppers and onions.

Ingredients
- 350 g Long grain rice
- 800 g Canned tomato
- 2 pieces Red bell pepper
- 2 moyens Onion
- 3 clove Garlic
- 15 g Fresh ginger
- 1 piece Scotch bonnet pepper
- 700 ml Vegetable broth
- 4 tbsp Vegetable oil
- 2 tbsp Tomato paste
- 1 tsp Dried thyme
- 1 tsp Salt and pepper
Instructions
Step 1
Make a sauce: blend the tomato, red bell pepper, onion, garlic, and ginger.
Step 2
Heat the oil and sauté the finely chopped onion for 5 minutes.
Step 3
Add the sauce and tomato paste, cook for 5 minutes over medium-high heat.
Step 4
Pour in the broth and add the whole Scotch bonnet pepper. Bring to a boil.
Step 5
Add the rice, stir well and cover. Cook for 20 minutes over low heat.
Step 6
Remove from heat, let rest for 5 minutes before serving.
