Nigerian Jollof Rice with Tomato
The famous red rice from Nigeria, cooked in a rich and spicy tomato sauce, topped with sliced grilled turkey.

Ingredients
- 400 g Turkey fillet
- 300 g Long-grain rice
- 400 g Fresh tomatoes
- 1 piece Red bell pepper
- 1 piece Onion
- 3 clove Garlic
- 1 piece Habanero pepper
- 600 ml Poultry broth
- 2 tbsp Tomato paste
- 4 tbsp Vegetable oil
- 1 tsp Paprika
- 1 tsp Salt and pepper
Instructions
Step 1
Cut the turkey into strips, season with salt and pepper.
Step 2
Chop the onion, garlic, and pepper. Blend the fresh tomatoes with the red bell pepper.
Step 3
Heat the oil and sear the turkey for 4 minutes, then set aside.
Step 4
In the same oil, sauté the onion, garlic, and pepper for 2 minutes.
Step 5
Pour in the tomato-pepper mixture and tomato paste, cook for 5 minutes.
Step 6
Add the rice, broth, and paprika, mix well.
Step 7
Cover and cook for 15 minutes over medium-low heat without stirring.
Step 8
Return the turkey to the rice, cover and cook for 3 more minutes.
