Roasted Halloumi with Zucchini and Cherry Tomatoes
Golden-brown halloumi slices roasted with zucchini and candied cherry tomatoes, infused with oregano. An irresistible Mediterranean dish.

Ingredients
- 200 g Halloumi
- 2 piece Zucchini
- 200 g Cherry tomatoes
- 1 tbsp Olive oil
- 1 tsp Dried oregano
Instructions
Step 1
Preheat the oven to 210°C. Slice the halloumi into 1 cm thick pieces and slice the zucchini into rounds.
Step 2
Arrange the zucchini, cherry tomatoes, and halloumi on a baking sheet. Drizzle with olive oil and sprinkle with oregano.
Step 3
Bake for 20 minutes until the halloumi is golden and the tomatoes are caramelized.
Step 4
Serve directly from the baking sheet while hot.
