Grilled halloumi with zucchini and mint
Golden and crispy halloumi stir-fried with zucchini and fresh mint in Mediterranean style. A delightful and filling summer dish.

Ingredients
- 250 g Halloumi
- 2 piece Zucchini
- 150 g Cherry tomatoes
- 1 bunch Fresh mint
- 1 tbsp Olive oil
- 0.5 piece Lemon
Instructions
Step 1
Cut the halloumi into 1 cm slices, zucchini into rounds, and cherry tomatoes in half.
Step 2
Heat the olive oil in a wok over high heat. Sear the halloumi for 2 minutes on each side until golden, then set aside.
Step 3
In the same wok, stir-fry the zucchini for 4 minutes, then add the cherry tomatoes for 2 minutes.
Step 4
Return the halloumi, squeeze the half lemon over, sprinkle with chopped mint, and serve.
