Herb-Roasted Potato and Lentil Gratin
A truly comforting family-style gratin with potatoes, lentils, and fresh herbs. Serve as a complete main course.

Ingredients
- 600 g Potatoes
- 150 g Green lentils
- 2 piece Carrots
- 1 piece Onion
- 400 ml Vegetable broth
- 3 tbsp Olive oil
- 2 tbsp Fresh herbs
- 1 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Preheat oven to 180°C.
Step 2
Peel potatoes, carrots, and onion, then slice thinly or cut into small dice.
Step 3
Rinse the lentils under cold water.
Step 4
In a baking dish, layer potatoes, carrots, onion, and lentils alternately.
Step 5
Pour broth over everything, drizzle with oil, season with salt and pepper.
Step 6
Cover the dish with foil and bake for 35-40 minutes until the potatoes are tender.
Step 7
Remove foil, sprinkle with fresh herbs, and serve hot.
