Roasted Potato and Carrot Gratin with Walnuts
A rustic French gratin combining roasted potatoes and carrots, topped with crushed walnuts and a drizzle of golden olive oil. Savory and satisfying.

Ingredients
- 600 g Potatoes
- 400 g Carrots
- 100 g Walnuts
- 4 tbsp Olive oil
- 1 tsp Salt
- 0.5 tsp Pepper
- 20 g Butter
Instructions
Step 1
Peel and cut the potatoes and carrots into even sticks.
Step 2
Arrange the vegetables on a baking sheet, drizzle with oil, and season with salt and pepper.
Step 3
Roughly chop the walnuts and scatter them over the vegetables.
Step 4
Bake at 200°C for 30-35 minutes until golden.
Step 5
Remove from the oven, add small pieces of butter, and serve hot.
