Penne Gratin with Tomato and Cheese

Ingredients
- 300 g Penne
- 1 medium Carrot
- 400 g Canned tomatoes
- 100 g Shredded cheese
- 0.5 medium Onion
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
- 2 l Water
- 1 tsp Herbes de Provence
Instructions
Step 1
Bring salted water to a boil in a pot.
Step 2
Peel and mince the onion and carrot.
Step 3
Heat the oil in a skillet and sauté the onion and carrot for 3 minutes.
Step 4
Add the canned tomatoes and herbs. Simmer for 5 minutes.
Step 5
Cook the penne according to package directions.
Step 6
Drain the pasta and mix with the tomato sauce.
Step 7
Pour the mixture into a baking dish and sprinkle with shredded cheese.
Step 8
Bake at 200°C for 10 minutes until the cheese is golden.
Step 9
Remove from the oven and let rest for 2 minutes before serving.
