Vegetable and Tomato Pasta Bake
A comforting baked pasta dish with lentils, carrots, and homemade tomato sauce. Baked until golden, it's Italian-style vegetarian comfort food at its finest.

Ingredients
- 200 g pasta
- 100 g green lentils
- 2 medium carrots
- 400 g tomato sauce
- 1 medium onion
- 2 clove garlic
- 2 tbsp olive oil
- 500 ml water
- 1 pinch salt
- 1 pinch pepper
- 1 tsp Herbes de Provence
Instructions
Step 1
Preheat the oven to 180°C.
Step 2
Mince the onion and garlic. Cut the carrots into small dice.
Step 3
Sauté the onion and garlic in olive oil for 2 minutes.
Step 4
Add the carrots, lentils, and tomato sauce. Cook for 12 minutes.
Step 5
Cook the pasta al dente in a pot of boiling salted water.
Step 6
Drain the pasta and mix it with the lentil-vegetable sauce.
Step 7
Transfer to a baking dish. Season with Herbes de Provence, salt, and pepper.
Step 8
Bake for 20-25 minutes until golden. Serve hot.
