Bread and Broccoli Gratin with Gruyère
An easy and tasty gratin, almost like a panade, that transforms stale bread into comfort food. Perfect for zero waste cooking.

Ingredients
- 150 g Sandwich bread
- 250 g Broccoli
- 80 g Gruyère
- 300 ml Water
- 20 g Butter
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Preheat the oven to 200°C
Step 2
Cut the broccoli into small florets and the bread into cubes
Step 3
Cook the broccoli in boiling salted water for 8 minutes
Step 4
Drain the broccoli and arrange it in a buttered dish with the bread cubes
Step 5
Sprinkle grated Gruyère on top and bake for 15 minutes until golden
