Baked White Beans Provençal Style
A creamy baked dish of white beans, tomatoes and zucchini seasoned with Herbs de Provence and finished in the oven. A rustic French classic that's hearty and full of fiber.

Ingredients
- 400 g canned white beans
- 1 piece zucchini
- 2 piece tomatoes
- 2 tsp Herbs de Provence
- 1 tbsp olive oil
- 2 clove garlic
Instructions
Step 1
Preheat the oven to 200°C. Slice the zucchini into rounds and the tomatoes into slices. Mince the garlic.
Step 2
Drain the white beans and place them in a baking dish with the zucchini, tomatoes and garlic.
Step 3
Drizzle with olive oil, sprinkle with Herbs de Provence and bake for 25 minutes.
Step 4
Serve hot directly from the dish.
