Cauliflower and Beet Gratin with Walnuts
A colorful vegetable gratin inspired by French cuisine, combining roasted cauliflower and beets with a crispy walnut crust.

Ingredients
- 400 g Cauliflower
- 300 g Beet
- 100 g Walnuts
- 4 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
- 30 g Butter
Instructions
Step 1
Preheat oven to 200°C. Cut cauliflower into florets and beets into cubes.
Step 2
Arrange vegetables on a baking sheet, drizzle with olive oil, season with salt and pepper. Roast for 20 minutes.
Step 3
Process walnuts in a food processor. Mix with melted butter.
Step 4
Transfer vegetables to a baking dish, cover with walnut-butter mixture.
Step 5
Bake for 15 minutes until golden brown.
