Cauliflower and Beet Gratin with Walnuts
A rich and flavorful French vegetable gratin combining roasted cauliflower and beets with a crunchy walnut crust. A complete and nutritious main dish.

Ingredients
- 400 g Cauliflower
- 250 g Beet
- 80 g Walnuts
- 3 tbsp Olive oil
- 1 tsp Salt
- 0.5 tsp Pepper
- 100 ml Water
Instructions
Step 1
Preheat the oven to 200°C.
Step 2
Cut the cauliflower into florets and the beet into cubes.
Step 3
Mix the vegetables with 2 tbsp of oil, salt, and pepper. Spread on a baking sheet.
Step 4
Roughly chop the walnuts and mix with 1 tbsp of oil.
Step 5
Roast the vegetables for 20 minutes, then add the walnut mixture and cook for an additional 15 minutes.
Step 6
Serve hot as a main course.
