Cauliflower and Beet Gratin with Lentils
A savory gratin combining cauliflower and beets with cooked lentils, baked until golden. A protein-rich vegetarian dish bursting with flavor.

Ingredients
- 400 g Cauliflower
- 250 g Beets
- 200 g Cooked lentils
- 2 tbsp Mustard
- 30 g Butter
- 3 tbsp Olive oil
- 3 g Salt
- 2 g Pepper
Instructions
Step 1
Preheat the oven to 200°C.
Step 2
Cut the cauliflower into small florets and the beets into cubes.
Step 3
Steam the cauliflower for 8 minutes or cook in a pot of salted water.
Step 4
Mix the cooked lentils with mustard, olive oil, salt and pepper.
Step 5
In a baking dish, layer the cauliflower, beets and lentil mixture.
Step 6
Dot with butter and bake for 25 minutes until lightly golden.
