Cauliflower and Gruyère Gratin
A comforting French gratin featuring tender cauliflower with a golden melted Gruyère crust.

Ingredients
- 400 g Cauliflower
- 80 g Gruyère
- 15 g Butter
- 1 tbsp Flour
- 200 ml Milk
- 1 pinch Salt
- 1 pinch Pepper

Step 1
Preheat the oven to 180°C
Step 2
Cut the cauliflower into florets and cook for 8 minutes in salted boiling water
Step 3
Melt the butter and add the flour to create a light roux
Step 4
Gradually pour in the milk while whisking until you have a smooth béchamel
Step 5
Drain the cauliflower and mix it with the sauce
Step 6
Pour into a baking dish, top with grated Gruyère, and bake for 12 minutes
