Cauliflower and Gruyère Gratin
A comforting French classic: tender cauliflower coated in a creamy Gruyère sauce and baked to golden perfection.

Ingredients
- 400 g Cauliflower
- 100 g Gruyère
- 30 g Butter
- 25 g Flour
- 250 ml Milk
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Preheat the oven to 200°C. Cut the cauliflower into small florets.
Step 2
Bring salted water to a boil and cook the cauliflower for 8-10 minutes until tender.
Step 3
Prepare the béchamel: melt the butter, add flour while stirring, then gradually pour in the milk while whisking.
Step 4
Let the sauce thicken for 2 minutes and season. Add half of the grated Gruyère.
Step 5
Drain the cauliflower and place it in a baking dish. Pour the sauce over it.
Step 6
Sprinkle with the remaining Gruyère and bake for 15 minutes until the top is golden.
