Broccoli and Cauliflower Gratin
A comforting French-style gratin with vegetables from your fridge covered in a simple cheese sauce and baked until golden.

Ingredients
- 300 g Broccoli
- 300 g Cauliflower
- 80 g Gruyère
- 30 g Parmesan
- 20 g Butter
- 20 g Flour
- 250 ml Milk
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the broccoli and cauliflower into small florets and cook for 8 minutes in boiling salted water.
Step 2
Drain the vegetables and arrange them in an oven-safe dish.
Step 3
Melt the butter in a pan, add the flour and stir for 1 minute to create a roux.
Step 4
Gradually pour in the milk while whisking to avoid lumps and let simmer for 3 minutes to thicken.
Step 5
Add the grated Gruyère and Parmesan, season with salt and pepper. Stir until the cheese is melted.
Step 6
Pour the sauce over the vegetables and bake for 15 minutes at 200°C until golden on top.
