Andalusian Gazpacho with Tomatoes and Peppers
A refreshing cold Spanish soup made with tomatoes, peppers, and cucumber, perfect for summer.

Ingredients
- 600 g Tomatoes
- 1 piece Red bell pepper
- 0.5 piece Cucumber
- 0.25 piece Red onion
- 2 cloves Garlic
- 3 tbsp Olive oil
- 1.5 tbsp Red vinegar
- 200 ml Tomato juice
- 50 g Stale bread
- 1 tsp Salt
- 0.5 tsp Pepper
- 200 ml Cold water
Instructions
Step 1
Wash and cut the tomatoes into large chunks.
Step 2
Cut the pepper, cucumber, and onion into chunks.
Step 3
Soak the bread in cold water.
Step 4
Put the tomatoes, pepper, cucumber, onion, and garlic in a blender.
Step 5
Add the soaked bread, olive oil, and vinegar.
Step 6
Blend until you achieve a smooth but slightly textured consistency.
Step 7
Add the tomato juice and water, season with salt and pepper.
Step 8
Mix and refrigerate for at least 2 hours before serving.
