Light Asian-Inspired Cake with Red Berries
A delicate cake inspired by Asian pastry traditions, made with flour and sugar, enhanced with matcha and topped with fresh red berries. Subtle and elegant.

Ingredients
- 180 g Flour
- 120 g Sugar
- 100 g Butter
- 3 piece Eggs
- 100 ml Milk
- 15 g Matcha powder
- 200 g Fresh red berries
- 1.5 tsp Baking powder
- 0.5 pinch Salt
- 50 g Icing sugar
Instructions
Step 1
Preheat oven to 175°C and prepare a buttered round cake tin
Step 2
Cream sugar and butter in a mixer until light and fluffy
Step 3
Add eggs one at a time while mixing, then gradually add milk
Step 4
Sift flour, matcha, baking powder and salt, then gently fold into the batter
Step 5
Pour batter into tin and scatter red berries on top
Step 6
Bake for 35 minutes until a knife inserted comes out clean
Step 7
Cool for 15 minutes, turn out of tin and dust with icing sugar
