Vegetarian Mexican-Style Breton Crepes
Breton crepes filled with a Mexican twist: simmered plant-based ground meat, spiced tomatoes, avocado and cheese. A tasty and easy crowd-pleaser.

Ingredients
- 8 pieces Breton crepes
- 300 g Vegetable ground meat
- 3 pieces Tomatoes
- 1.5 piece Avocados
- 100 g Gruyère
- 150 ml Tomato sauce
- 2 tbsp Olive oil
- 1 tsp Paprika
- 0.5 tsp Cumin
- 0.5 tsp Garlic powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Dice the tomatoes and slice the avocado. Grate the Gruyère.
Step 2
Sauté the vegetable ground meat in oil in a pan over medium heat for 5 minutes.
Step 3
Add the tomato sauce, diced tomatoes, paprika, cumin and garlic powder. Season with salt and pepper. Simmer for 10 minutes.
Step 4
Warm the Breton crepes in a pan or microwave for 2 minutes.
Step 5
Fill each crepe with the warm mixture, avocado slices and grated Gruyère. Fold and serve.
